Vegan Breakfast Burrito

This may just be my favorite savory breakfast! It is an easy meal, and you will feel great after eating this healthy and delicious dish.


Ingredients (Makes two burritos):

Two flour tortillas, cooked

Half of a ripe avocado

One Roma tomato

1/4 cup of cooked lentils

For the tofu scramble:

One block of extra firm tofu

1 tablespoon of avocado oil

4 cloves of garlic, minced

2 tablespoons of nutritional yeast

1/4 teaspoon of salt

1/4 teaspoon of turmeric

1/4 teaspoon of ground pepper

A sprinkle of red pepper flakes

Fresh basil for garnish


In a medium saucepan on medium heat, heat up the olive oil. Drain, then crumble to tofu with a fork or your hands, and cook with the minced garlic until the water from the tofu is mostly gone. Add the spices, then set aside to cool.

To prepare the burrito, slice the avocado and tomato into thin pieces and lay them on both tortillas. Sprinkle on the lentils, then scoop on desired amount of the tofu scramble. I used about two large spoonfuls. Sprinkle on some salt or other desired seasonings, and add in the basil. Roll the tortillas, and enjoy!!
