This peanut butter granola is crunchy, delicious, and a perfect breakfast!
Ingredients:
2 1/2 cups of rolled oats
1/2 cup shredded coconut
1 cup of chopped nuts*
1/2 cup of peanut butter
1/2 cup of liquid sweetener
1/2 teaspoon of sea salt
1 teaspoon of cinnamon
1/4 cup vegan butter
1 teaspoon of vanilla extract
Dried fruit, chocolate chips (optional)
Preheat the oven to 325 degrees F.
Toss together the oats, nuts, and coconut on a large baking sheet and toast for 15 minutes, or until the coconut is golden brown.
Whiles this is toasting, mix the butter, peanut butter, sweetener, salt, and cinnamon together in a small saucepan. Stir over low heat for five minutes. Remove from heat and stir in the vanilla.
Now, mix all of the ingredients except for the fruit and chocolate together. Spread out the Granola on the pan.
Bake for twenty minutes, or until the granola is looking evenly golden brown. Mix in the fruit and chocolate. Enjoy as a cereal or on top of some dairy-free yogurt. Enjoy!
*I used sliced almonds and walnuts
