Vegan Breakfast Millet

This delicious breakfast is another healthy porridge option if you are getting tired of oatmeal!


1 cup of uncooked millet

1 teaspoon of apple cider vinegar

2 cups of water

2 cups of non-dairy milk

1 tablespoon of maple syrup

1 teaspoon of vanilla extract

1/2 teaspoon of cinnamon

Fruit and granola, for topping

Cover the millet with cool water and the apple cider vinegar, soak overnight.

In the morning, drain and rinse the millet. Combine the millet, 2 cups of water, and non-dairy milk in a medium saucepan. Bring to a boil, then lower to a simmer and cover for about 20 minutes.

Add in the rest of the ingredients and use an immersion blender to make the millet have a more liquid texture, adding extra milk as necessary.

Serve and top with fruit and granola. Eat warm and enjoy!
