Green Power Pasta

This one-pot pasta recipe will leave you feeling nourished and clean!


1 12-ounce bag of small shell pasta

1 cup of frozen green peas

1 packed cup of spinach

1 1/2 cups of cashews

1/3 cup of nutritional yeast

1 teaspoon of garlic powder (sub for one fresh garlic clove)

2 tablespoons of lemon juice

1 cup of plant milk

1/4 teaspoon of pepper

Avocado and tomatoes, to top

To start, cook the green peas and spinach on medium heat in a saucepan until the peas are unfrozen. Put these ingredients into the blender. Fill the saucepan with water and bring to a boil, and then boil the cashews for 10 minutes. Add the cashews to the saucepan along with the nutritional years, garlic, lemon, pepper, and milk. Blend together thoroughly. Place in the fridge to cool.

Cook the pasta according to package directions. Drain and toss with the green sauce. Top with avocado and tomatoes. Enjoy!
