Vegan Stuffed Shells

These stuffed shells are a great dinner, especially for when you have people over. They are easy to serve and fun to eat! The creamy stuffing will leave you feeling satisfied.


Serves 5-6 people

Ingredients:

1 16 oz. bag of jumbo shells

2 packages of firm tofu, drained and pressed

1 cup of cooked spinach

1/3 cup of nutritional yeast

1 tablespoon of avocado oil

1 teaspoon salt, plus more for topping

2 cloves of garlic, minced

10 leaves of fresh basil

1 teaspoon of dried oregano

1/4 teaspoon of red pepper flakes

1/4 teaspoon of pepper

1 jar of marinara sauce

Vegan Parmesan (optional)


To start, cook and drain the pasta according to the directions on the packaging. Prepare the stuffing by placing the tofu, spinach, nutritional yeast, oil, and seasonings to a food processor or blender, and pulse everything together until a paste is formed.


Preheat the oven to 350 degrees F. Either spoon or pipe about 2 tablespoons of the filling into each shell. You can either pour the marinara sauce on the bottom of a large baking dish and place the stuffed shells on top of it, or you can place the stuffed shells on the dish and pour the marinara sauce over them. Sprinkle vegan parmesan over the top, if you wish. Place the baking dish in a middle rack and bake for 10 minutes.

Remove from the oven, let cool for a few minutes, serve, and enjoy!
