Spiral Cucumber Salad

This super simple and fast cucumber salad is a perfect snack or appetizer! The crisp cucumbers and sweet and spicy sauce will satisfy your taste buds.

Ingredients:

4 baby cucumbers

4 tablespoons of soy sauce

1 tablespoon of maple syrup

1 tablespoon of toasted sesame oil

1 teaspoon of garlic powder

1 tablespoon of sesame seeds

1/2 teaspoon of crushed red pepper

1 stem of green onion, to serve (optional)


To start, cut the tops and bottoms off of the cucumbers. Place one at a time between two chopsticks and slice down at a slight angle. Repeat every 1 centimeter, and then flip the cucumber and repeat the slices on the other side. This should give you the slinky effect with your cucumbers. If you would rather ribbon or slice the cucumbers, that would be just as delicious :)


Mix the rest of the ingredients together in a medium bowl (not the green onions). Cover the cucumbers in the sauce, and let them sit for a few minutes. Serve the cucumbers with sliced green onion, and sprinkle extra sesame seeds and red pepper on top for an extra yummy flavor!
