These delicious spicy cucumber rolls topped with tofu are perfect for entertaining guests!
Ingredients (serves 12):
3 large cucumbers
1 1/2 cups of cooked white rice
2 blocks of Trader Joe's siracha tofu
2 tablespoons of spicy vegan mayo*
1 tablespoon of black sesame seeds
If not already done, cook the rice. Slice the tofu into 1/2-inch blocks. Spread them out evenly on a lined pan, and bake for 15 minutes at 400 F, or until browned on the edges. While the tofu is cooking, wash and peel the cucumbers. Slice the cucumbers along the length and width. Scoop out the seeds to create a boat.
Fill each cucumber with rice. Place three pieces of tofu on each boat, then drizzle with spicy mayo. Sprinkle black sesame seeds on top. Plate them and enjoy!
*If you don't have spicy vegan mayo, mix cayenne or red pepper in with vegan mayo
