This is my favorite lazy-day lunch fix! It's filling, healthy, and easy to make into your own meal!
Ingredients (makes 6 taquitos):
6 small flour tortillas
Juice from 1 lime
2 avocados
Salt and pepper, for seasoning
2 tablespoons of packed cilantro, plus more for topping
1/2 can of refried beans
Taco seasoning (optional)
1 large tomato, diced
2-3 tablespoons of avocado oil
To start, mash up the avocado in a small bowl with the lime, pinches of salt and pepper, and cilantro. Set aside. In another small bowl, mix in about a teaspoon of taco seasoning into the refried beans.
Now, you can either make these taquitos in the air fryer or in a frying pan (I prefer the frying pan). If you are going to make them in the air fryer, brush a light coat of avocado oil on one side of the tortilla. Leave them ungreased for now if you're using a frying pan. Fill each tortilla with a scoop of the mashed avocado, refried beans, and a few diced tomatoes.
In the air fryer, bake at 400 degrees F for 10 minutes on a pan, flipping them five minutes through.
On a frying pan, drizzle a tablespoon of avocado oil on the pan and fry both sides of your tortilla until they are golden brown and crispy. Repeat with each one.
Drizzle with extra lime juice and top with cilantro, enjoy!
